Table grapes have gone from being a simple dessert fruit to becoming the undisputed star of trends on TikTok, Instagram, and YouTube Shorts. Their balance of sweetness, acidity, juiciness, and crisp texture makes them perfect for both frozen candy snacks and baked gourmet appetizers.
"SOUR PATCH" GRAPES
Ingredients:
500g of seedless green table grapes (Cotton Candy or Thompson varieties work great).
Juice of 2 fresh limes or lemons.
1 sachet (20-30 g) of powdered gelatin flavored with lemon, green apple or watermelon (or a mixture of erythritol with a pinch of citric acid if you prefer a sugar-free version).
Preparation:
-
Wash and soak: Detach the grapes from the bunch, wash them well and place them in a bowl while they are still damp.
-
Citrus coating: Pour lime juice over the grapes and stir to ensure they are fully coated (the acid helps the powder adhere and enhances the contrast).
-
Coating: Sprinkle the gelatin or acid mixture little by little over the grapes while shaking the bowl until they are evenly frosted.
-
To freeze: Spread the grapes on a tray lined with parchment paper, making sure they don't touch each other. Freeze for at least 2 to 3 hours.

TANGHULU OF GRAPES
Ingredients:
-
300g of table grapes (red or green, firm and seedless).
-
200g of refined white sugar.
-
100 ml of water.
-
Long skewer sticks.
-
A bowl with water and plenty of ice.
Preparation:
-
Thorough drying: Wash the grapes and dry them with paper towels until no moisture remains (water ruins the caramel). Thread 3 to 4 grapes onto each skewer.
-
Caramel stage: In a small saucepan, combine the sugar and water. Cook over medium heat without stirring to prevent crystallization. It should boil until it reaches 150°C (hard ball stage) or until it turns a very pale golden color and a drop dropped into cold water hardens instantly.
-
The coating: Very carefully, quickly turn each skewer in the syrup to create an almost transparent and very thin layer.
-
Thermal shock: Immediately immerse the skewer for 2 seconds in the bowl of ice water to instantly harden the glass. Let it dry on parchment paper.
